Rather than eating a new futuristic new dish, I hope to learn from the past. I want to eat my meal in the nature, untouched by modern society and pollution. A forrest filled with giant trees, a vast desolate desert, on a secluded island or on a frigid tundra. The food should be local cuisine, prepared acording to traditions by the local people. During the meal I want to take part in their customs and culture, I want to learn something new in the hopes of being able to share this wisdom with the rest of the world.
I feel that when we innovate we should sometimes look in the past instead of the future. Learn from history, from what others have done and experienced. A meal can be so much more than a source of subsistence. Food should be an experience, creativity, innovation.
