There's an amazing book titled The Pull of the Earth by Laurie Thorp which is about how a school garden changed the lives of children in an elementary school in a low income neighborhood (brought peace into their turbulent families, improved their nutrition, changed the way they related to their food and sustainable food growing practices). This was Laurie's dissertation research at MSU. You can read a bit of it at the link above- although the book itself is pricey.
