I would like to take this opportunity to draw attention to one of the projects I coordinated with another girl at my university (last year). It is called the
Student Kitchen Project. Her and I ran a community kitchen on our campus at UBC (we took over the program from another girl- who had started it).
The purpose of the project is to teach students how to cook nutritious, (often organic and vegetarian) meals while on a student budget (~$5 CDN/meal). Everyone knows that students don't have a lot of money...or time. So, being a community kitchen exclusive for students, we made sure that everyone helped cook the meal together (we delegated tasks to individuals) as a community.
For each session we would accept about 10 students who could join us for a FREE dinner. Our funding came from the Student Environment Center at UBC and that is how we paid for our groceries. The kitchen itself was in the home economics department, so we had access to a number of stoves, fridges, and other kitchen ware. I know that we successfully increased the food security of a few dozen students by giving them the knowledge they needed to help themselves be more aware of food security issues in Vancouver. We got a lot of positive feedback from participants as well.
Since I was going away on exchange, I had to leave the project. But I think there is someone else who is now in charge of carrying on the program at the school. And hopefully when I come back I will have the time to coordinate it again...
