in 2020, i'm pretty sure dinner will look something like my husband cooking a meal ripe with vegetables and spices from our garden. complete with a free range chicken we raised ourselves. we won't be eating alone, though. in the past few years, we've taken to the community around us and consider our neighbors as part of our family as well. it works out perfectly. if our crop isn't as good one year, and someone else has plenty, we share. one chicken is a lot for just a few people - but can be spread out among many in a healthy dinner of chicken and rice with steamed vegetables.
we'll also frequent his restaurant - partially because he's the owner, but also because we love the staff. tonight is one of the nights the new menu is released, so local homeless have taken to lining up outside the restaurant, waiting for their turn to taste a home cooked meal and be served like any other patron. before the night is over, some of these will sign up for the mentorship program - allowing them the opportunities to learn skills needed in the workplace and the experience to get a foot in the door with competitive companies. the kids who went through the young entrepreneurs mentorship with my husband serve the guests and take their opinion cards to read through and edit the menu as needed. all food is fresh and local - even the meat.
